FLASHBACK TO 1986
I was the Sous Chef when the club was in the old building, and the opening Executive Chef in the building where the club is now. I remember…
Feeding Princess Anne. We had 30 US and British Secret Service agents roaming the club and kitchen with bomb dogs. Princess Anne loved Saint-André cheese with fresh ground black pepper.
The turkey buzzards! We tried to get rid of them with camphor, plastic owls, rubber snakes, painted alligators - none of it worked.
When they shut the streets down one Sunday morning to lift the hoods to the top of the building with a helicopter. They were the first self-washing hoods I’d ever seen. The building was still under construction for the first couple of years. Whenever the water was turned off on lower floors, the pressure would drop and our gas would shut off. This happened a few times in the middle of lunch service.
High tea with Aubrey Franklin, tea ambassador to the world. We made Singing Hinnies, Spotted Dick and other fun-sounding English food.
Thank you for strolling with me down memory lane. I loved the club and all the people there. It was a great time in my life and I will always have a warm place in my heart for it.
